Italian Angel Chicken Pasta

This is a remake of one our favorite dishes, using a low-fat version of cream cheese, and swapping golden mushroom soup for low-fat cream of chicken soup.

This remake is just as tasty and very filling. It is really good comfort food.

Mom's Cheese Enchiladas - Remade (by STRENEE)

This is my mom's enchiladas remade healthier. The oringinal recipe came from a Latin American co-worker and is the best I have had.

You can easily add additional spices and ingredients to suit your pallet, such as, olives, green chilis, onions, beans, etc.

Serve with refried beans and Spanish rice!

Stacy's Award Winning Three Bean Chili

This is an extremely healthy BEEF chili. This is the type of chili that takes all day to properly make but is well worth the effort. It makes a huge batch of chili.

I came up with it by taking my Mom's basic recipe and asking my husband what he wanted in a chili. *poof*

You can easily add different beans, more spice, etc. The spice temperature of this is around medium. Flavorful enough to be tasty, not too spicy to burn!

P.S. I really did win awards for this chili at a local chili cook-off (People's Choice & Top Prize).

Hawaiian Beef Marinade

Serve with sticky rice or egg noodles. Add the beef to your favorite stir-fry veggies (peppers, onions, etc.).
