On day 4 of a vicious flu/cold thing, I decided to fight back with a soup full of all the things I knew would help fight off the badness. Garlic & ginger have antiviral properties, the vegetables and lemon are chock full of vitamins, and the miso is the miracle healer. It's a great vegetarian/vegan alternative to chicken soup.
Makes 2 loaves.
This is a (slight) adaptation of a recipe that a friend--the above-mentioned Susie--made years ago, and I loved. I think maybe it's the addition of cloves that really makes it outstanding.
She thankfully passed along the recipe. It's not "light" by any means, but a slice can be a nice snack when you plan accordingly, right?
I also love to set up a "Banana Bread Station" to make this recipe whenever we happen to have children visiting. Kids are excellent banana smashers.
I made this from the items I had from the farmer's market one week, and now it's a family favorite! It's really beautifully colored, and tastes a little like stuffing (because of the herbs). If you prep the squash and quinoa ahead of time, the rest is a snap.
