Feel free to try with various smoked or tinned fish and fresh or frozen vegetables to your taste. Or use white fish plus smoked cheese. Add fresh or dried herbs, too! It is delicious served hot or cold and easy to pack in a picnic or lunchbox.

This can be served hot or cold

Carrot and Cumin Soup

Low fat, low calorie, tasty soup

Beef heart Lasagne

Beef heart is an economical and tasty low fat source of red meat. It does not taste like offal.
Each serving contains two helpings of veg.

Leek and Wensleydale Soup

Delicious easy soup. If you want to freeze it in portions add less water during cooking, and add more during re-heating. One serving is at least one helping of veg.

Microwave Lemon Curd (Lemon Cheese)

This is best kept in the refrigerator as it does nor keep as long as jams because of the lower sugar content. It can be used in any recipe that uses jam.

English Summer Pudding

Very simple and delicious pudding that can be prepared using fresh or defrosted frozen fruits or a mix of both, and varied depending on which fruit are available that you like.

Stuffed marrow

This is tasty served hot with veggies and potatoes or cold with salads. The servings quoted are generous for a main meal but smaller servings can be given for a lighter meal.

Moist Chocolate Orange Cake

A simple to make, tasty moist cake.
Makes 20 servings

Beef casserole, July 2012

Saute onions, mushrooms, peppers and spices until onions are translucent. Put into slow cooker. Remove any fat from meat and cut into bite sized pieces and add to slow cooker and stir. Leave on high for one hour. Add stock, yogurt, seasoning, yogurt and green beans. Stir and leave on high for one hour, then turn down to low and cook overnight. serve with new potatoes, pasta or rice

Garlic, Herb, and Walnut Bread

This is a wonderful flavoured bread. When eaten fresh it can be dunked without spread into soups, tomato juice, or casseroles and is great for a simple quick meal with, an egg, tinned tomatoes and mushrooms poured on top. If you have a food mixer with a dough hook the preparation only takes minutes. If you have a breadmaking machine put the ingredients in as directed by the manufacturer.

Prawn Creole

A superquick tasty low-fat, high flavour meal that doesn't cause much washing up either!
The veg and sauce can be prepared and frozen together and the prawns added at a later date.

Banana cake, moist but low fat and sugar

Suitable for breakfast, lunch,tea or coffee breaks, snack, or tea-party,
Can be sliced and frozen.
Stores for 2 weeks if wrapped in clingfilm and kept in refridgerator.
