Found this great recipe for one of my favorite Ethiopian dishes on International Vegetarian Union.
The amount of servings is listed as 8 - which would make this a "side dish". However, I often eat double portions as a "main dish".
Delicious classic Italian soup with white beans for a vegetarian protein punch!
This dish is common all over North Africa and the Middle East. I know it from Ethiopian restaurants where it is normally eaten with injera bread (a crepe-like bread made with tef flour). However it is also great over rice or with crusty French bread or even by itself.
As a person with very limited vision, I appreciate simple combinations of foods that are partially prepared. I also promised myself that I would eat AT LEAST one fruit or veggie serving for breakfast. Thus the Veggie Eggy Super Starter was born! (to me, it tastes a little like veggie lo mein.) It's a quick, easy meal made from ingredients that are already chopped/combined. It is literally so easy - a blind woman can do it!
