I had 4 leftover hamburger buns that needed a purpose.. So, Croutons!
Cheesy Broccoli and Cauliflower Casserole
This is an adaptation of Giada's Italian Sausage egg Bake. I used veggie bacon in place of the sausage. I call it vegetarian but there is eggs.
adapted from Dave Lieberman's Food Network recipe to be made Vegetarian and fewer servings.
Adapted from a Barefoot Contessa recipe making it less fat and smaller portion. Original recipe has 3 eggs and heavy cream for one serving.
This baked mac and cheese has tofu to add protein and creaminess to the cheese sauce! No one will know it's there unless you tell them!
Adapted from a "simply recipes" recipe. Theirs made too much egg mixture and used gruyere cheese. You could also sub some egg substitute, but I didn't have any this time!
Really quite an easy recipe, just takes some time.
Shredded zucchini patties for stove top frying. Can easily limit the oil if using a spray oil, but I like some healthy fat now and then!
Can substitute ground flax for wheat germ if you have it.. I didn't!

Recipe adapted from Paula Deen's peanut butter bread. This is not exactly "healthy" but nice for when you just want something baked! Excellent as a muffin too. Can also add peanut butter chips for more of a dessert feel.
Lower carb version of my breakfast burrito
Just an easy onion "gravy" chicken cooked in the skillet, best over rice. My husband devoured it, with seconds and occasionally saying with his mouth full.. "This is really good!"

A lighter version of my Holiday Sweet Potato Souffle
Breakfast burrito made with southwestern egg beaters, mild pork sausge and reduced fat cheddar cheese. Excellent for people who like the McDonalds Breakfast burrito but need to watch cholesterol or sodium. This has less fat and more protien as well.
All the other recipes either didn't include rice or included sausage, so here's mine, based on what I had in the house! With brown rice, plenty of veggies and no sausage.
Delicious and nutritious breakfast casserole using the ingredients I had on hand. This dish is great for substitutions and personalization!
Very flavorful version of baked macaroni, with correct nutritional info.
My version of pineapple chicken with a little spice and less brown sugar.
My grandmothers recipe, with non-fat or low fat options substituted. She'd balk at me, but it's just as good!
There are a few great Moroccan Chicken recipes on the site, but none were "trimmed down" enough for me! Still just as tasty, with less sodium, calories and fat!
With flax, splenda, wheat germ and no butter, these cookies taste better than they should! Super healthy version for those with a sweet tooth!
Very good as a "guilty" food to accompany a lighter fare choice, like tilapia and brown rice!
