My mother's beef stew, adapted for one serving for a small 1 quart crock pot!
Combine raw whole chicken and all other ingredients except for the rice and frozen peas. Add 1 teaspoon salt and 1/2 teaspoon pepper. Cover and bring to a boil. Skim fat. Reduce heat and cover and simmer for 1.5 hours or until chicken is tender. Remove chicken and chicken and broth to cool. Debone chicken and cut into chunks. Skim fat from cooled broth and bring to a boil. Return chicken to pot. Prepare rice according to package directions and add to the pot with the frozen peas and heat through. Makes approximately 12, 2 cup servings.
This is a great way to have meatloaf if you don't want to make a big batch all at once -- make a big batch and freeze in individual servings for use later.
Great Chili with little effort!
Add all ingredients to large stock pot and heat.
