Crock Pot Chicken Francaise For One

Combine ingredients except cornstarch, plus salt and pepper to taste, in a small crock pot. Cook on low all day. To thicken sauce, combine cornstarch with a small amount of warm water and stir into crock pot. Cook on high for a few minutes with the lid off to thicken sauce.

Crock Pot Beef Stew for One

My mother's beef stew, adapted for one serving for a small 1 quart crock pot!

Herbed Chicken Soup

Combine raw whole chicken and all other ingredients except for the rice and frozen peas. Add 1 teaspoon salt and 1/2 teaspoon pepper. Cover and bring to a boil. Skim fat. Reduce heat and cover and simmer for 1.5 hours or until chicken is tender. Remove chicken and chicken and broth to cool. Debone chicken and cut into chunks. Skim fat from cooled broth and bring to a boil. Return chicken to pot. Prepare rice according to package directions and add to the pot with the frozen peas and heat through. Makes approximately 12, 2 cup servings.
