Peanuts are just a garnish so you can leave them out in case of allergies or to save calories. However, they are high in protein and healthy fats, so they're very good for you!
This soup turns out to be such a beautiful ruby colour. It's intended to be served cold, but if you're feeling chilly, it tastes great warmed up too!
You can either roast your own peppers or buy them at the store. I prefer to roast them myself because the store-bought ones are packed in oil and this increases the calorie count. Plus it's so easy (and kinda fun) to roast your own.
Well, they're pancakes from mix with added bran and nutmeg. Obviously very easy. Consider this less of a recipe and more of an idea. Really yummy though - the nutmeg gives it that extra something special. Maybe try adding fruit?
P.S. The cooking time is for one pancake. If you do them all one by one, it'll end up about 30 minutes.
Making your own soup at home is a good way to keep the sodium considerably lower than what you find in pre-made soups. The sodium per serving in this soup isn't negligible, but it's about half of what you'd find in most soups at the grocery store.
