My mother cannot have really spicy food and the cut of meat for corned beef is not always the best, so I tried using regular beef tenderloin or sirloin and seasoning with a little black pepper. Enjoy!!
One night, I made a casserole for dinner, that had noodles, sauce, meat and cheese. I did not make enough noodles. So, my aunt suggested that I add some frozen peas, and a favorite dish was born. So, we call this Auntie’s Casserole.
Your favorite pasta, served with extra lean ground beef, in alfredo sauce and covered with your favorite cheese. Yum!!
This is an ever-changing recipe, dependent on mood and what’s available. I sometimes substitute the ground beef, with pork loin or chicken. then change the spices accordingly.
