This basic Italian style tomato sauce compliments a wide variety of pastas. Add vegetarian protein "meatballs" for a special extra touch.

Mix together butter and sugar with vanilla and a dash of salt and milk to form a dough ball.
Refrigerate until chilled. Split in half. Roll out the dough until thin.
Spread 1/2 of the peanut butter over the rolled out dough. Roll into a jelly roll. Chill.

Cook shells in salted water, remove.
Brown lean beef, onions, and garlic in 1 tbsp of olive oil.
Combine egg, ricotta spinach, and ground beef mixture. Stuff into cooled shells.
Place a few spoonfuls of sauce in the bottom of an oven proof pan, place shells on sauce and pour the remainder of the sauce over the top of the shells.
Top with 1/2 cup of cheddar cheese.
Saute mushroom and peppers in Pam in a non stick pan. Slice potato, cover with saran wrap and cook in a microwave about 3 1/2 minutes or so until tender.
Spread re fried beans, mushrooms and peppers over the top and add the cheddar cheese.
Return to the microwave until the cheese is just melted.
