I was looking for a way to make an easy, fairly healthy tomato soup that was a little more substantial than traditional tomato soup, and this is what I came up with. If the sodium is too high, use reduced-salt tomatoes and broth/bouillon.
This is a lower-fat and calorie version of alfredo sauce with spinach. Use it on pasta, eggs, or as a yummy filling for baked potatoes. You can also make it without the spinach, and use like traditional sauce.
