A quick and easy breakfast that's great to assemble with the kids! Can be easily converted to a vegetarian breakfast with elimination of the eggs.
This is a spin on the fabulous "Mexican Casserole" on this site. But this version uses slow-cooked chicken instead of ground beef. The chicken is so tender and delicious! Lighten it up even more by substituting low fat cheese.
