Sophy's Low Fat 50/50 Meatballs

Finally stumbling on a blend of pork & beef my picky son will eat, I used it for making meatballs instead of buying the packaged stuff. This is now my basic meatball ready to be seasoned per specific needs.

Sophy's Low Fat Swedish Meatballs

We love Swedish meatballs. Trying to make a lower fat variety that my boy would eat became a challenge, until I tried a 50/50 mix of 93% FF beef and ground pork loin. He loved it. Also, I don't flour and pan fry the meatballs. I dunk them in boiling broth for 1-2 minutes, then finish them in the sauce.

I first made this variation when all I could find was ground thigh meat. It has more flavor, but a bit more fat and calories as well.

Sophy's Butternut Squash Soup

I love butternut squash soup. Hated the price and fat content of the packaged stuff, so I did some research and came up with this one. I've added some extra veggies for flavor and texture.

I love using my sourdough starter, but occasionally I want something that rises faster so I added yeast and a bit of sugar in this recipe.

Sophy's Whole Grain Flour Tortillias

I mix these in my bread machine, cut the dough into eighths, bag and refrigerate, then cook as needed in my toaster oven. Mmmmm

Crispy Blueberry Flax Granola Bars with Almonds

I hate the price of all the "nutritional" bars on the market. I decided to mix up a batch of my own and based it on the traditional rice cereal treat. By replacing 2-3 cups cereal with trail mix, chopped nuts, dried fruit, or granola, I've come up with some tasty treats. This blend is with a "bulk" blueberry granola & dry roasted almonds.

There are no additional oils or butters used in this recipe. I use parchement paper to press the mixture in parchment lined pan to form the bars.

Almost Instant Oatmeal with Apples & Raisins

I love instant oatmeal, but most of the commercial stuff is too expensive and has too much junk in it. I found a recipe for a home made mix and this is my favorite blend.
