We have fallen in love with almond butter and I wanted to make a cookie with it. So I worked with a traditional peanut butter cookie recipe cutting down the amount of sugar needed because almond butter is such a delicate light flavor. They have kind of a pecan sandy texture to them.
I wanted a recipe with all wheat flour and no sugar and so experimented with a combination of different recipes. I like it because it is versatile and you can switch up many of the ingredients based on your preference.
