Secret ingredient to creaminess without cream? Pureed white beans. And some potato. Ooooh, yum. This can also be made without the celery and with less onion, just make sure to use a very flavorful bullion or vegetable stock instead of plain water. Splash of white wine or vermouth is also nice, add it during the veg saute step.
Reminiscent of the wheat and berry yogurt that used to be on the store shelves when I was a kid in the 80's. I believe it's stil a popular favorite in my other home, Stradbally, Ireland. My friend Blair visited me while 35 weeks pregnant and we had a wonderful, cool morning eating this by the pool.
Satisfies major mexican food cravings. You may substitute one extra cup of beans for the TVP with minimal nutrition change.
Adjust amount and type of taco seasoning to regulate heat.
When I have the calories available, I top w/ 1/2 oz sharp cheddar, 1/2 ounce tortilla chips, 1/4 avocado and extra fresh cilantro.
Also freezes well!

Not a traditionally light recipe, however, I have it on hand in the fridge to add just a dollop to steamed veggies or sauted shrimp. It makes great garlic bread, and you don't need much. Just a dab'll do ya.
Lightened version of Avocado Whip Dessert. Would fit with South Beach Diet or other Low-Carb diet.
This is the non-lightened version. Very thick, rich, surprising. I like to top w/ fresh, real whipped cream and perhaps chopped kiwi fruit. Experiment - add mint and lime juice for a 'mojito' version!
Also filled out with garbanzo beans and potato. YUM. Spice can be adjusted to taste
Consider dividing this recipe into three servings and adding an ounce of good parmiggiano reggiano cheese - YUM!
In less than 10 minutes, this fiber-rich dish is ready for dinner. Serve with warm pitas or over basmati rice. You can top with a dollop of low-fat plain yogurt to contrast the earthy spices.
