Pictured here are the main ingredients for this salad. I was out of seasoned rice vinegar (preferred), so I used white distilled this day. It still came out great.
My take on PCRM's buckwheat blueberry pancakes since my stomach doesn't agree with the buckwheat flour. This is a much lighter mixture.
If you have been craving a vegan alternative to the taste of Thanksgiving and Turkey, this is it. I make it every other week for sandwiches or to eat with mashed potatoes.
