I only make this when my garden comes in so everything is fresh and organic. I suppose one could try to substitute frozen Italian flat green beans and most good produce departments have fresh organic small Red Bliss potatoes, onions, parsley (I used the more delicately flavored curly parsley) and garlic. - Go for it! I call this a side dish, but when I make this recipe, it is all I want. My husband feels the same way.
Very tasty pasta dish. I prepare the sauce and then freeze it in 2 serving containers (@2.5 cups of sauce per serving) - supper for 2 - cook 4 oz. whole wheat pasta and grate 1/4 cup of good Parmesan cheese (2 Tablespoons per serving). Add a small green salad on the side and voila! Super supper!
Low fat - BIG flavor and very filling. Good comfort food. Great to make over the week-end. Freezes beautifully.
Can be made with any dried pulses (peas, beans, lentils, etc) and any hard greens or mix of greens (kale, turnip greens or collards, etc). Great served with cornbread, bulghur, rice, etc and a variety of condiments and garnishes (country ham bits, balsamic vinegar, hot sauces, salsas, cilantro, crushed toasted almonds - be creative here!)
