Vegan Lasagna with Italian "Sausage" and Better than Cream Cheese - It's also Gluten Free!
Sweet and Savory Vegan Chili
This filling tastes delicious and somewhat like seasoned ground meat. The Worchester Sauce should actually be substituted with a Vegan Option (L&P has Anchovy). This can be used instead of ground beef for a burger patty. I used it tonight for stuffed cabbage. I might try it for taco meat next time.
A perfect dip for Falafel or Veggies! Yum!

It tastes so fresh! Day two, after the herbs have an chance to infuse the soup, it really just tastes like it came out of the garden.
It's Vegan as is, but I like to add some goat cheese and fresh herbs to garnish!
This is my first attempt at what I consider to be one of my favorite soups when I eat out.
So easy and with very few Ingredients!
Chunk the Beets, slice the Apples then squeeze half a lime into the mix. Coarsely chop the Hazelnuts and break the Goat Cheese into the Beets/Apples. Add a few handfuls of Spinach.
In a separate bowl, whisk together olive oil, balsamic (perhaps a mixture of balsamic and apple cider) vinegar and a bit of brown mustard. Drizzle mix over the salad and toss. Chill. Yum.

Whenever I make soup (or almost any meal), I almost always make WAY more than I expected to make which means the two of us are eating soup (or the spaghetti sauce or the curry) for multiple days. No problem when it's this yum!
