Laura's Favorite Vinegarette

This is a dressing I use on all kinds of things, cole slaw, tomatoes, spinach, mixed greens and more. I just drizzle, pinch, sprinkle and splash. Hard to come up with actual quantities. It's all to taste.

Southwest Chicken Beans and Corn skillet lunch (1 cup)

I just made this up today as an experiment and it tasted really good!

Chicken Salad

I make this with various ingredients depending on what's available. This is an entire, balanced meal on one plate.

Pavilions Ham, Egg & Pepper Jack Cheese Breakfast Sandwich on Whole wheat bread

I had pepper jack cheese and added chopped onions and green peppers. I also asked for whole wheat flat bread - but she brought me regular whole wheat bread.

Spicy Yogurt Dip

I have become a fanatic for non-fat plain greek yogurt. I use it instead of sour cream, mayonaise and even heavy cream in cooking. I can also use stevia in it and use it as a whipped topping on desserts! I made this to go with the crispy microwave chips, but I dipped red pepper slices in it and that was even better!
