Plus, hello, great way to eat your veggies! This zucchini muffin recipe uses whole grains and is a delicious way to use up extra zucchini from your garden.

Vegetarian Pasta "Carbonara"

This bacon-y pasta dish is vegetarian, and delicious! Instead of bacon, fry tofu with onions, a bit of olive oil, and bacon salt to make faux bacon.

This recipe does not take pasta-cooking time into account, as I keep cooked pasta in my fridge for quick meals!

Black Bean Basil Hummus

One day I decided to substitute a can of black beans for garbanzo beans while making hummus. t might actually be better than garbanzo bean hummus. I added the basil because I had some growing in my garden.

Roasted Red Pepper Dip

This sauce is very versatile. It's a great lower-calorie substitute for hummus. You can use it as a dip for veggies, crackers, pita bread, etc. Or you can use it in cooking - try sauteing your favorite veggies with a tablespoon of this for added flavor. You can also put this on top of meat (before or after cooking). It's especially nice with dry meats that need a little extra moisture.
