Using 1/3 almond flour cuts down on carbs a bit, and imparts a nice nutty taste to whatever you are baking!
These buttery little pouches of yummi-ness are a great appetizer, and can be made with very little ingredients. I use leftover pie crust to make 2 pouches (I always have leftover pie crust, as I flatten and trim my crusts before using them to cut down on carbs). Don't be afraid to use more or less butter, coconut oil, or parmesan cheese depending on your caloric needs.
This recipe calls for less sugar than traditional recipes. Also, using the dates cuts down on use of granulated sugar but also boosts fiber content. The result is still a deliciously buttery, sweet, chewy-chocolately cookie!
Cream together butter, dates (I mince mine to a paste), and honey. Add eggs & honey. In a separate bowl, mix dry ingredients. Add dry to wet til combined. Fold in chocolate chips. Use 1 heaping tablespoon for each cookie. Bake at 350 for 8-10 minutes.
