Cauliflower Pizza Crust

Preheat oven to 400 degrees F. Mix 1/4 cup chia seed in 3/4 cup water and place in refrigerator for 20 min. Steam cauliflower and place in a bowl to cool. Use a potato masher or pastry blending tool to mash cauliflower till it resembles rice. Measure out 3 cups and place in a mixing bowl. Add ground almonds, oregano, salt and pepper. Make a hole in center to add chia seeds. Combine ingredients by hand and shape everything into a ball. It should be loose and sticky not a traditional dough. Spread dough onto a baking pan and form into a flat crust with a ridge around the outside Bake 25 min. or until golden brown. Add your favorite pizza toppings and bake 5-10 more min. Enjoy!
