Made this salad with only what was very sparsely available in a beach house in Chappaquiddick when I was in a rush. It turned out to be good and was a surprise.
A new take on what to do with Thanksgiving leftovers. Introduces bok choy, an often overlooked vegetable which, while having a delicate flavor, adds a fabulous crunch to recipes.
I was in the mood for something sweet this evening, but hadn't had fulfilled my 5 fruits-and-vegetables-a-day requirement. This worked perfectly!
Thanks to a generous anonymous soul, a basket full of fresh garden-grown zucchini were present for the taking this morning in our kitchen. I had just stopped by our local organic Potomac Vegetable Farms and picked up a bunch of warmly-hued flowers, freshly-laid eggs, cucumber, black cherries, swiss chard and squash the other day. Since they had recently opened there were no zucchini.
What a flavor explosion! I think my Grandmother would say, "Va Bene."
