Yummy and packed with protein! These make a great addition to a sack lunch, snack or protein pick me up before or after a workout.
These are super easy to make, yummy and very filling!
These have been a favorite of our family's for years. Anyone I make it for raves about them and it is so easy to make!
I've adapted a few recipes to make this version. You can also mix in bacon, green onions, or add roasted garlic to make a garlic mashed potato version. If you want a delicious creamy soup base, thin it out with a bit of cream until desired consistency.
I've adapted this from a few different recipes. These came out light and fluffy and surprisingly good.
These are great for breakfast or as a treat. Only 3 carbs per muffin
Pumpkin adds a few extra carbs, but it is a nice treat now and then. May tweak this a bit more to get the carb count down a bit.

Has a bit of sugar so can be a bit carby, but still a tasty option.
Like the fried rice, this is made with shredded cauliflower and tastes very much like spanish/mexican rice. Goes great with the Chili Relleno Casserole
This heated up fine the next day, but not sure it would last too much longer than that.
Easy, Yummy and low carb. If you want to reduce the carb count, reduce the amount of chili's you use by half. I've made it both ways and it tastes fine either way
These are all the rage on various low carb forums. I made them last night and was really pleased with them as a substitute for french fries. Cook them until they are somewhat crispy on the outside. They may blacken a bit, you don't want them to burn though.
