I just started playing around with ingredients I had on hand and came up with this. Low calorie, low fat and vegetarian/vegan to boot!
I made this as a soup but it could be a side by using less water when cooking. Great for setting up before going to work then ready when you get home.
I just threw some ingredients I like in a crock pot...it was ready when I got home. Pretty tasty too
Easy and Delicious...even my son loves it ...and doesn't know it's healthy...haha
This is a quick and simple egg salad. I use plain yogurt because I don't like mayo or Miracle Whip. I also buy my eggs already boiled when I get a craving for egg salad...makes it so much quicker for me.
