I don't like mushrooms, so I wanted to do something different, PLUS I searched for vegan quiche on here yesterday and only got one result, the rest being painfully vegetarian, so I thought this would be a good addition.

Two Tomato Pilaf with Marinated Tofu

To make this I use Hodgson Mill's 'Bulgar Wheat and Soy'. It is a really great low calorie whole grain with extra protein from the soy, and although it is marketed as a breakfast grain (you may find it in your health food section's cereal aisle), you can use it for a lot of things. If you can't find it, you could substitute regular bulgar wheat or even kashi 7 grain cereal.
