A quick, easy and healthy complete meal! Makes a nice presentation because it's so colorful. My father named this one, haha. Originaly recipe calls for ground beef, beef broth, white rice, and 5 minutes of simmering, so I substituted.
Nice summery side dish; good to bring to barbeques. When making in advance, I like to wait to add the dressing until right before it's served. I got this recipe from a good friend Katie, who teaches cooking classes at the local Whole Foods. The theme of the class was "cooking for a family of 4 for less money than it would cost to eat at McDonald's."
