Here's a nice summer, spring (actually anytime) salad.
Can be used as a 'side' or stuff it into a pita pocket or even 'roll' it in a whole grain wheat tortilla.
Serve with some
Make a delicious sandwich spread thats tasty, filling with just a 'spark' of pepper.
Served with 'mango' soup (another recipe) and a bit of chilled pineapple chunks and you've got an amazing but simple lunch. *[photos coming later]
Makes an 'excellent' dish for lunch or as a 'side' for dinner (1/2-3/4 serving amount).
The avocado adds a 'nutty flavour to the already 'aromatic' taste of the quinoa.
Be careful, it's tasty and very 'addictive' and too much of it can add up the carbs.
