A quick and easy one-skillet meal - just serve with a tossed salad and dinner is done! This is a Weight Watchers recipe. You can reduce the amount of ground beef or substitute TVP - I have done both but the men in my family really like real meat.
Another family favorite recipe - bacon & eggs with spaghetti - how can you go wrong with that??? Not particularly low-cal or low-fat, but I try to control my portions and enjoy it occasionally, maybe once a month or so.
You can thicken the sauce with cornstarch and serve as an entree dish, but I really like it as a soup (like a Greek version of Italian wedding soup).

Adjust the amount of ginger to your taste, or you can use finely minced fresh ginger. Use could also substitute Splenda brown sugar (I've done this for my diabetic dad). This is an easy side, but special enough for guests - I've even made it for Thanksgiving dinner.
This is a recipe I found on-line and that I have "skinny-fied" and cut the calories almost in half, but retained the hearty coziness. It's good anytime, but perfect on a chilly night.
This is not particularly low-calorie, but it does make a delicious entree for guests or Sunday dinner.
I first had this soup in a little Indian deli in Eureka Springs, AR on a very blustery December day. It was so awesome! I talked to the waitress about the ingredients, and have recreated it the best I could. It tastes just as good as I remember.
A spicy, tart & sweet fruit salad that is easy to prepare and delicious!
This is fabulous in the summer with fresh tomatoes and cucumbers and either Vidalia or Texas Sweet onions
