This is my fav easy cobbler recipe - the dough is a biscuit-style, no rolling out required. When my hubby brings home fresh Texas peaches, this is the recipe I grab because I just can't wait! Obviously you can substitute Splenda for the sugar if that's an issue for you. As for the butter - well, enjoy it on rare occasions and have small servings -it's totally worth it!

Skillet Pasta with Meat Sauce

A quick and easy one-skillet meal - just serve with a tossed salad and dinner is done! This is a Weight Watchers recipe. You can reduce the amount of ground beef or substitute TVP - I have done both but the men in my family really like real meat.

Spaghetti Carbonara

Another family favorite recipe - bacon & eggs with spaghetti - how can you go wrong with that??? Not particularly low-cal or low-fat, but I try to control my portions and enjoy it occasionally, maybe once a month or so.

Meatballs Avgolemono

You can thicken the sauce with cornstarch and serve as an entree dish, but I really like it as a soup (like a Greek version of Italian wedding soup).

Pam's Kicked Up Shrimp Ramen Noodles

This is NOT a healthy recipe, but I love it anyway. It is quick, easy & delicious. I try to limit myself to once a week on a night when my hubby is gone and I don't have to cook supper. I also like to eat it when I have a cold.

Greek Chicken Pasta

Just the right amount for two - or dinner for one & leftovers for lunch!

Ginger-Glazed Carrots

Adjust the amount of ginger to your taste, or you can use finely minced fresh ginger. Use could also substitute Splenda brown sugar (I've done this for my diabetic dad). This is an easy side, but special enough for guests - I've even made it for Thanksgiving dinner.

Cheddar Potato Soup

This is a recipe I found on-line and that I have "skinny-fied" and cut the calories almost in half, but retained the hearty coziness. It's good anytime, but perfect on a chilly night.

Tangy Oven-Fried Pork Chops

This is not particularly low-calorie, but it does make a delicious entree for guests or Sunday dinner.

Garlic Tomato Soup

I first had this soup in a little Indian deli in Eureka Springs, AR on a very blustery December day. It was so awesome! I talked to the waitress about the ingredients, and have recreated it the best I could. It tastes just as good as I remember.

Spiced Fruit Salad with Smoked Salmon

A spicy, tart & sweet fruit salad that is easy to prepare and delicious!

Summer Veggies Vinaigrette

This is fabulous in the summer with fresh tomatoes and cucumbers and either Vidalia or Texas Sweet onions

Corn Salad with Avocado Dressing

Serve as a salad on mixed greens or as a dip with tortilla chips.

Southwest Beans and Rice

I adapted this recipe to make it meatless.
