You can add chia seeds or flax oil to this as well...add a protein on the side and you have a great breakfast!
I used homemade taco seasoning (less salt) and leftover taco shells and rice. I have also done this by adding 1/2 cup instant brown rice and letting it simmer.
You can add green chilies and top with green onions, as well.
