Hearty tomato flavor. Add side salad and bread for Italian style dinner.
This is the dish to make if you have left over mashed potatoes. Use very lean ground beef to save on calories and fat.
This is a great main dish salad or leave the tuna out and is a wonderful side salad
Use in chicken soup or as thick spaghetti. Make with wheat flour for more healthly recipe.
I use the dark meat and broth for homemade chicken soup with homemade noodles. The chicken breast makes wonderful chicken salad or use in casseroles.
You can leave the shrimp out and add chicken if you like or no meat at all.
To have a non meat dish cook the ground beef seperately and add to 1/2 half of the rice mixture. Roasting the peppers and removing the skins takes a little longer but is worth doing.
Meatless-Or add chicken or shrimp. Can change vegetables to what you have on hand.
May be served hot or cold. Change veggies, nuts to suit your taste. I used grilled chicken breast or if in a hurry buy a rotisserie chicken to use.
