This is a variation on an Emeril recipe. He made this soup with a jalapeno pepper and some cream. I prefer it on the sweet side, so I omitted the pepper and added an apple, and left out the cream since this site is about calorie reduction, not addition.
This is an easy way to use your leftover brown rice from a previous night's dinner. Makes a light lunch salad, or a dinner side-dish
I use the last leftover rib of a standing rib roast to make this soup, but any left-over beef roast or steak will work. Mushrooms and spinach are optional, I like to use dried chanterelles, but shitakes are more readily available.
This is my version of chicken noodle soup that I make whenever I have a leftover roast chicken carcass from the night before. Simply pick off any remaining chicken meat and the rest will fall off the bone after simmering. A great way to get an extra meal squeezed in.
The bacon grease adds a nice round yumminess, but can easily be substituted for olive oil to be vegan.
