This is a lower fat version of Johnny Carino's Jalapeno Garlic Tilapia.

"This Greek/Lebanese style meat loaf is sliced and served with pita bread, tzatziki, and tomatoes for a delicious gyro that is the closest I've come to emulating my favorite Mediterranean restaurant. The preparation time seems long, but most of it is resting time, so you can be doing other stuff!"
Original recipe called for 1/2 beef, and 1/2 lamb. I changed to ground turkey to make it a bit healthier.
Got original recipe from Nightline. Adjusted the amounts of oil and butter and used reduced sodium chicken broth to cut down on fat and calories. Original called for double amounts of both butter & oil, and for chicken stock.
Great topped with a poached egg.

It's a great foodie blog.
I bake up a batch of basic chicken breast each week so I always have some on hand for quick dinners. Sometimes basic chicken can get boring and I need to come up with a healthy taste bud pleasing twist.
I've had/seen this in several restaurants. It's always drowning in BBQ sauce and topped with bacon and way too much cheese. Here is a very tasty, but healthier version. I have excluded the bacon altogether, but you could use lean bacon or turkey bacon if you wanted.
Crusty bread and radicchio with Italian dressing make nice sides. End with red grapes and anise-dusted sugar cookies.

Salad Only.
Add: 6 oz Island Pork Tenderloin, 2 Tbsp Cumin Vinaigrette
Using turkey slashes fat; mixing a milk-soaked pita into the patty keeps it moist.
Great as a dipping sauce for Shrimp & Scallion Pot Stickers or as a Marinade/sauce for chicken stir fry.
Very tasty and a little spicy. Great to make ahead and portion out and freeze.
I love to serve this with buffalo chicken over a big salad or with buffalo chicken joes. Feta is a nice alternative to bleu cheese. If you'd prefer bleu cheese you can sub it for the feta and use bleu cheese dressing instead of ranch.
Use leftover or pre-baked chicken to make this really quick weekday meal.
Very tasty sauce. Super easy to make. My grandmother taught me how to make this sauce growing up. I usually make four times this recipe and freeze 3 portions so I always have fresh sauce. So much better than any pre-made sauce you can buy.
