Delicious vegetarian curry that is a hit with the kids too! Serve it with naan or chapattis.
This is from an great diabetic crockpot cookbook that borrowed from a friend (sorry, can't remember the name). The chicken is very tender and the meal isn't too spicy, even with 2 jalapenos. Serve with brown rice, naan and/or corn on the cob.
