adapted from "Ferber's, now famous, Spaghetti Sauce"
Over 1 cup, 2 servings vegetables in each serving.
My kids love this thick and hearty stew. (You can call it soup if you like.) They don't even know they are eating black-eyed peas and lima beans! :) Served up with buttermilk biscuits and a glass of milk... Yum!
The extra cooking time on low allows the smaller beans to cook thoroughly. This lets them break down while on high and gives a deep color to the stew's liquid.
Sweet and savory one-dish meal that serves up 1/2 c veggie and 1/2 c fruit in each serving.
1 cup servings
Half cup of veggies in each serving!

My three kids love this and don't even know it has mushrooms and spinach in it. :)
This meat mixture makes a lot and is great in any mexican type dish- enchiladas, tacos, burritos, casseroles, nachos, taco salad, etc. I love to use it for Mexican Pita Pizzas (recipe shared in spark recipes).

4 mini muffins equals one serving of fruit! My kids love these minis for breakfast and snack recess at school. They are not thick or gummy and really healthy compared to other recipes.
