Homemade enchilada sauce, made without wheat flour (gluten) or added sugar. I adapted a recipe from Emeril Lagasse. It's a little spicy, so use with care. ;)
Because of the Coconut Crystals, these cookies turn out a little bit darker than your standard Snickerdoodle, but they taste really good. Do not over bake them, or they will be too dry.

I altered my tried and true banana bread recipe so that I could serve it to my neighbors, who are vegan.
This recipe was handed down to me from a good friend of my mothers. I've been making it for friends and family for nearly 20 years now, and get rave reviews for it.
Make a stock with your turkey carcass after getting as much meat off of it as you can. I like to use the turkey broth in this recipe. If you don't have turkey stock, use a 32 oz carton of chicken stock (broth) in place of the turkey stock.

A few extra ingredients changes the taste of my original Chili with Red Beans recipe. I don't put any extra spices in it, because on of our kids is sensitive to them, but the Mister and I both top off our chili with some pickled jalapeño’s for some extra heat. :o)
