delicious and nutritious vegetarian quiche
This recipe came from my Armenian grandmother. She used butter, but I changed it to olive oil to cut down on the saturated fat. A family staple growing up, everyone loves this, including the kids.
This is a low-fat version of lasagna. I used ground turkey breast instead of ground beef and fat free ricotta cheese. You can make this even healthier by using whole grain pasta and fat free Italian Cheese for the topping. The zucchini and eggplant is rather scant, so feel free to add as many veggies as you wish.
This is an experiment into making tomato soup. I had been growing tomatos and had too many so decided to try some soup. Still needs tweaking!
It's quite high in sodium - probably from the chicken broth. You can use a low sodium broth instead.
I wanted a meal that incorporated the healthiest foods I could find, and this is what I came up with. Use Vegetable Stock instead of beef for an even healthier meal.
