Creamy ricotta and roasted red pepper sauce over bowtie pasta with leftover grilled chicken.
Served to my husband in a restaurant. He liked it so much I recreated the recipe at home.
I bought several cans of Progresso Garden Vegetable soup on sale, then read the nutritional information when I got home -- 920 mg sodium per serving! I created this recipe to use up the soup and cut down on the sodium.
Delicious and filling. Adapted from a Better Homes and Gardens recipe.
Prepare in the even and refrigerate overnight. Next morning pop it into the oven for a real breakfast treat
This is very mild to suit my family. I would probably add chiles, crushed red pepper flakes, or hot sauce if making it just for myself.

Even my tomato-hating daughter loves this dish, and it's easy to put together.
