Basic smoothie using fresh baby spinach, frozen raspberries & strawberries plus some almond milk. It's tasty and smooth.
Whole grain pasta + vegetables + beans = fiber, protein, filling, high nutrient food. Adjust amounts of pasta and other ingredients to suit your taste. Calorie count will vary in this case.
Fairly simple and nutritious tofu recipe using natural peanut butter, a very small amount of olive oil, and some natural soy sauce to create a peanut sauce. Thickness can vary with the ratio of peanut butter to other ingredients. Spices could be added to add some heat. Here I only used the ingredients listed.
Whole wheat pasta and vegan "cheese" recipe using Daiya vegan cheese. Daiya is a brand of non-dairy, casein-free cheese that melts well and behaves similarly to dairy cheese when cooked. It is quite tasty albeit not without calories. To add nutritional value, the spirals are whole wheat, and frozen mixed vegetables (a blend of corn, peas, limas, carrots and green beans is what I used) as well as Hickory Smoke flavored Tofurky brand deli slices (adds a touch of protein and even more flavor). The Himalayan salt is definitely not needed although I had it on hand so decided to add it to the pasta water. This is a very filling meal by itself because of the whole grains, and it is very nutritional.
A hearty noodle soup/stew with the possibilty of adding brewer's yeast for nutritional advantages including B vitamins!
This is a soup that I've always made from scratch but not always with fresh ingredients. The ingredients can be from frozen, dried, canned or fresh. It's quick to make and can be made light or very chunky according to taste preference.

Easy low call vegetable soup. Can add any other vegetables as desired.
