The only thing I don't like about Sparkpeople's diet tracker is that the standard measurement for cilantro is "Tbsp."
This recipe is a great quick breakfast for those of us who worship cilantro like a guru and would like to be able to measure our consumption in 'bunches.'
Very quick and cheap -- I make a big pot of these lentils on Sunday night, split into four containers, and have healthy and fulfilling lunches for the week.
Could very easily be made vegetarian by substituting vegetable broth instead of the chicken stock.

I made vegetable broth by freezing all my veggie peelings for a month, wrapped in foil, and then heating them up in water for a few hours and straining out the vegetable bits. Then I added leftovers from a chicken / brown rice dinner, and voila! Chicken Soup with Rice
