I love the Thai soup Tom Kha. Sometimes I buy it canned and slim it down a little. Then I have the option of adding chicken, mushrooms, or cilantro if I have them around. It satisfies my craving without having to go out to eat!
This is my reduced sugar and lower fat version of the recipe on the package.
Healthy raw lunch if you have the whole recipe or a nice side salad if divided.
