Finally something healthy at the movies. If you are in the AMC Dine-in Theater, have this instead of popcorn. This is an estimate as I didn't have any measuring tools with me at the theater :) If you are making this yourself, use whole grain pita for more fiber.
Moist, Delicious and nutritious. High in fiber (5g) and low in fat. Add some agave if they are not sweet enough for you, but don't forget to add the calories.

Searched through my pantry to make a healthy dinner. Had a couple of tomatoes from my garden and an eggplant from the farmers market and voila, this recipe was born.
Recipe adapted from Cooking Light June 2011 Issue. I switched the sugar with agave, used Challah bread and added mango. No syrup needed with this meal.
For those true Italians out there - there's nothing like grilling some sausage and peppers on a portuguese roll in the summertime, but who wants all that fat and those nitrates? I found a great alternative - chicken sausage w/garden vegetables and asiago cheese. Only 110 calories per link! I even found whole wheat Portuguese rolls!
This recipe is adapted from S.Mac - an awesome mac and cheese place near NYU. I've made it a little healthier by using low fat milk instead of whole, but still tastes great! You could make it even healthier by using whole wheat pasta. And, don't forget the rosemary - makes a big difference.

I only used one tablespoon of mexican spice chili powder and omitted the jalapeno and it was just spicy enough
