Finally something healthy at the movies. If you are in the AMC Dine-in Theater, have this instead of popcorn. This is an estimate as I didn't have any measuring tools with me at the theater :) If you are making this yourself, use whole grain pita for more fiber.

I ran out of my favorite cole slaw dressing so combined this dressing with some broccoli slaw and craisins and some chopped up pineapple and actually got a healthier and tastier version.

Grilled Sausage and Peppers

For those true Italians out there - there's nothing like grilling some sausage and peppers on a portuguese roll in the summertime, but who wants all that fat and those nitrates? I found a great alternative - chicken sausage w/garden vegetables and asiago cheese. Only 110 calories per link! I even found whole wheat Portuguese rolls!

Parisienne Mac and Cheese

This recipe is adapted from S.Mac - an awesome mac and cheese place near NYU. I've made it a little healthier by using low fat milk instead of whole, but still tastes great! You could make it even healthier by using whole wheat pasta. And, don't forget the rosemary - makes a big difference.

Dark Fudge Brownies

No one will ever know that the secret ingredient that makes these brownies virtually cholesterol free and low fat is black beans. Moist and dense, you'll never have to make package brownies again. It's not exactly the same, but I think my version comes pretty close. It is a great main course salad when served with flatbread or breadsticks.
