Instead of using coconut milk to make this chia pudding, I'm using the whole coconut with the meat and water made into a puree.
It's a meal in a cup, packed with protein, calcium and vitamins. This is one of the few things that I can tolerate when having morning sickness, and while it's not exactly low in calories, it gives a burst of energy, settles the stomach with a hint of ginger, and can be made lower-calorie by replacing honey with Splenda, or just using a very ripe banana to achieve a bit more sweetness.
A refreshing salad, great in a wrap or on a bed of lettuce.
