In Egypt, street vendors ladle portions of rice, lentils and macaroni, then customers top this with fried onions and spicy tomato sauce. The vinegar and cayenne give the tomato sauce a uniquely flavored zip, and the combo of lentils, rice and macaroni truly stick to the ribs. Yummy vegetarian entree!
Serve with crusty bread, yum!
Soy protein meat substitute combined with lentils can be used in place of the chicken sausage for a delectable vegetarian meal!
Light but satisfying Italian manicotti!
Mix first 4/dry ingredients; add melted butter, beaten egg and mashed banana, stir with fork until it forms a sticky batter. Spoon into muffin tins.
This lowfat crockpot stew comes from a ladies magazine (years ago, can't remember which!), serve over 1/2 c. plain couscous. Healthy and yummy, great for a fall or winter meal.
