Part of the national dish of Barbados, (Flying fish and Cou Cou) this very simple side dish is typically served with a fish stew e.g. flying fish or red herring, but can be served with any kind of meat or vegetable gravy. The flavour is deliberately bland and acts as a vehicle for the accompanying stew.
The preseasoned beans and rice is the reason why this otherwise healthy and complete meal has so much sodium. Just replace with regular beans and rice.
