Guacamole flavoured with chopped tomatoes, onion, garlic and yogurt with a some cayenne for heat.
This is a mildly spicy lentil main course with spinach. High in protein and fibre!
The calories are for 2 main servings and I'd recommend that you enjoy a serving of brown basmati rice or white basmati rice. If you want this recipe can serve 4 as a side dish.
Not for the faint of heart, but it's filling and will keep you going while doing heavy exercising.
An easy to prepare and easy to cook vegetarian supper!
This a very mild dish but easy to spice up if you like by adding curry paste or cayenne pepper.
The veggies reduce a lot so don't worry about the amount of eggplant and zucchini after you chop it into 1 inch cubes.
