Chilled Peach and Nectarine Soup

Yet another one of my favorites from the New Vegetarian Times!!

What I had in the fridge one day

I tried to remember each step but I sort of threw everything together and cooked it until it looked done. Like it or not this dish is pretty healthy. I think it's delicious. It's not a lot of work and it uses the vegetables I have on hand every day. This is my go-to dish, just like cereal is my go-to breakfast. Play around with different stir fry's until you find one you like, stir fry is a common meal in my house and it's very satisfying.

"Vegan" Everything Cookie

I found this recipe on the podcast "The Easy Vegan," I did have to make some changes though. I used a little spenda to curb the calories without changing the taste and unfortunately I have not found a a healthy vegan margarine. When I find one, I will make the cookies over again, but for now they aren't quite vegan yet!

Sweet and Sour Tofu

This is a great recipe from the New Vegetarian Cuisine Cookbook. Linda Rosensweig, the author, comments on this recipe with her statement , "Sweet and sour is a combination often associated with Chinese cooking. In this dish, I keep the tofu firm and crisp by stir-frying it first and briefly reheating it toward the end of the cooking time." I have made minor ingredient alterations, such as onions instead of peppers, and adding bamboo shoots. I also prefer to marinade the tofu overnight, or at least for 30 minutes before cooking.

Oatmeal & Whole Wheat Pancakes/Waffles

Use this delicious recipe to make healthy and nutritious pancakes, OR waffles. The recipe is very versatile and you can substitute soy milk for regular or even buttermilk and honey for water and sugar substitute or substitute the whole eggs for eggbeaters! It makes a wonderful, filling, and guilt free breakfast. Most pancakes and waffles have about 400 calories each, these only have 110! I usually make about 16 waffles in my Belgian waffle maker, but you could make even more pancakes or mini waffles!

Kind of like cookies these toasted treats are a great alternative to sugary cookies.
