Linda's Southern Deviled Eggs

This was based on the recipe in Southern Living magazine's "Party Cookbook" (c) 1972. Over the years, I have changed the recipe to my own taste. NOT for those who are watching cholesterol!

Trader Joe's Pumpkin Muffins made the low-fat way!

I made a couple of substitutions for suggested ingredients, carefully measured portions, and thus cut the calories in half, and reduced the fat 20%!

Kale Green Smoothie--6 oz serving

Tastes like apple with a touch of banana.

Shrimp with Peanut-Garlic Sauce

From "Desperation Dinners" column by Beverly Mills and Alicia Ross, in the Charlotte Observer Sept. 23, 2009
Really yummy! To make nutritional info work out correctly, 1 serving of shrimp = 3 oz. (approx. 5 shrimp)

Pancakes-Good Housekeeping Cookbook c.1949

From Mom's cookbook (we ran out of Bisquick)

Shrimp Pasta with Cherry Tomatoes

This is NOT an original recipe. My husband made it from a recipe he found on the internet. I can't give proper credit to the creator of the recipe because he didn't save that info, but I wanted to make sure no one thinks that I am taking credit for it. I'm just putting it here in the recipe book because I'll surely eat it again!

Tabouli

My version, with fresh raw jicama for a bit of crunch.

Roasted Red Pepper Hummus

Quick and easy way to get some protein. 150 calories and 5 g. protein. Serve with pita or naan, and tabbouli salad, for a complete middle eastern-style meal. Try it as a dip for fresh veggies!

Salmon with Soy Sauce

The sauce is very sweet.

Creamy Pasta with Sugar Snap Peas and Salmon

Quick way to stretch leftover salmon in a one-dish meal.
