Very easy. This is more of a reminder then a recipe
Play with the spices; I find I need more red pepper and salt. But I like things spicy!

After trying many light Fettuccine recipes, finally I found one I love!! If you don't like Spinach you can omit or replace with mushrooms.
Recipe makes 2 casseroles, one for dinner and one for the freezer!

I found this recipe in a Cooking Light magazine. I've made some changes to make it perfect. It's a great summer salad and can be made ahead.
Simply amazing!! This is by far my favorite way to prepare fish!! A must try!!!
This would also be great with diced apples!!! Make extra to freeze, just pop in the toaster when ready to enjoy.
