We aren't a vegan family but we do have a daughter who has to eat GF and I am trying to get my family to eat less animal products in general. I found the original recipe at picklesnhoney.com and tweeked it a bit.
Deliciously moist and a perfect healthy snack - no refined sugars or gluten
Gluten Free (when using certified GF Oats - No Wheat - Oatmeal cookies (from Alton Brown)
Yummy pudding - minus the egg! I love tapioca pudding but needed to make it minus the egg - this came out perfect!!
Made with whole wheat flour - reduced fat & sugar. A healthy - but still super yummy cookie. Great when served with tea!
289 calories per (very large) serving. No beans with a creamy cheesy layer. Hubby, little kids & teen all like it. Yum!
Delicious salad - can be made with plain red bell pepper or you can take the extra step and roast it & slice it. The calorie count is based on 12 servings. REALLY, the salad is good for 6 servings & the dressing is good for 12 - I usually use 1/2 the dressing one day and then save the other 1/2 for another day.

My families fave....NO ricotta (even though I love the stuff, the high quality stuff can be costly). I come from a good Italian family and as much as I (and my mom) hate to admit it - this baked ziti is really, really good.

I found the recipe in Cooking Light Magazine. I NEVER would have thought that a cookie without butter or whole eggs could taste this good. Our cookie of choice around here!
One of my favorite go-to meals. Quick, easy, flavorful and loved by all! Adapted from a Recipezaar recipe.
1 c whole wheat pastry flour
.5 t baking soda
1 t baking powder
1 egg
1 c almond breeze original
.5 cup fage 0% fat greek yogurt
1 blueberries
Dairy Free, Low Gluten yummy muffins! Makes a huge batch for freezing. You can add raisins/pecans/chocolate chips to make them even yummier! Just be sure to add it into the calorie count. As it is they are 107 calories each.

Using Spelt & Oat Flour, no eggs this turns out 12 yummy muffins for about 112 calories each.
Based on the recipe from the totally awesome book The Most Decadent Diet - with more readily available ingredients. 109 calories each! (I listed the brands that I used so you would know if your calorie count would be the same using the ingred, you have on hand.)
Once again, adapted from the totally awesome cookbook The Most Decadent Diet Ever (you gotta buy it!!). SUper yummy, creamy coleslaw, pretty to look at and only 50 calories/serving with 2g fat!
I miss chips and salsa something fierce. Give me a bowl of crispy chips and some homemade salsa and I am in heaven. I can now safely feed my addiction in under 2 minutes with the use of a microwave. :)
A base salad dressing that can be made into a Mexican, Asian or Italian dressing. No fat!
Tastes JUST like the real thing at 263 calories and 12 grams of fat! Kid friendly too! :)
