A quick, hearty, flavorful stew. Well suited to a slow cooker but can be prepared very quickly and easily on stove top. The peanut butter adds a delicious creaminess without sending the calorie count up too high.
This recipe was inspired by HealthierLynn (thanks!!), and since I couldn't find her version in the recipe database, I entered this one myself.
Made with goat cheese and ff plain yogurt. Not much fewer calories than reg ff cream cheese, but it's nice for a change of pace.

Makes 4 1-cup servings
This is also really good with mushrooms, and fresh basil or thyme, if you have it. Add one or two cloves of fresh garlic for a more savory flavor.
I serve this on a bed of greens for a filling lunch course. I use a bottled sauce to plain yogurt as part of the dressing (Trader Joe's lemon dill sauce) because that makes it a bit faster and easier. It would be easy to mix your own yogurt dressing, though, using mustard, lemon juice, dill, salt and pepper, garlic powder, etc. (and honey or sugar)
The European style yogurt is creamy and smooth, and is more liquid than regular yogurt-- about the consistency of a thick dressing. If you only have the thicker kind of yogurt, add lemon juice or vinegar (or water) to get a similar "pourable" consistency.
This can be made simply by whisking in a bowl, or shaking in a jar, but the method using a food processor gives this dressing a beautiful, creamy look and texture.
